I make these for my grandfather every year because he just loves those york peppermint patties and these taste almost EXACTLY the same - plus they're super CHEAP!! and one batch will last him all year in the freezer hehehe
Ingredients:
1 package (8 oz.) cream cheese, softened
1 tsp. peppermint extract
9 C. confectioners' sugar - sifted
3/4 C. milk chocolate chips
3/4 C. semisweet chocolate chips
3 T. shortening (I used some parafin instead)
In a large mixing bowl, beat the cream cheese and extract until smooth.
Gradually add confectioners' sugar, beating well.
*Shape into 1" balls. Place on waxed paper-lined baking sheets.
cover with another sheet of waxed paper and flatten balls with the bottom of a glass. refrigerate for an hour or until chilled.
*chilling before forming into balls makes it easier. but don't overchill!!!!!
In a double boiler, melt chips and shortening or wax; stir until smooth.
Cool slightly. Dip patties in melted chocolate; place on waxed paper until firm.store in the refrigerator.
(yield: about 4 dozen)
