buckeyes

got this recipe from a friend, many years ago...when we were basically newlyweds and needed an easy/inexpensive gift idea for friends and family at the holidays..we got it in our heads to get together and bake for everyone
sadly she moved away..so we can no longer make our yummy gifts together..but year after year we both still make these AWESOME candies!
ya really can't go wrong with peanut butter and chocolate...these are so super easy and YUMMY and a little goes a long way - you get tons out of one batch - but I usually double it because I give them to EVERYONE for christmas :)

ingredients:

1½ cups peanut butter
3½ cups confectioners' sugar
1 sticks butter, softened
2 cups semisweet or milk chocolate chips (see note below)

directions:

1. blend peanut butter, sugar, and butter (dough will look dry).
2. roll into 1 inch balls and place on a wax paper lined cookie sheet.
3. melt chocolate chips in the top of a double boiler (use very low heat, not much hotter than tap water or the chocolate will get grainy)
5. dip peanut butter balls in chocolate *using a toothpick might help) leave a small portion of peanut butter showing at the top to make them look like buckeyes.

6. put back on the wax paper lined cookie sheet to let chocolate set

note: I usually add a bit of grated beeswax (if you can't find beeswax you could use paraffin..just make sure you get the right one..some candle wax is not considered food grade..get the kind used for canning) to the chocolate...you can't taste it but it helps the chocolate set and helps it stay shiny - I eyeball it so next time I do it I'll try to remember to measure and add the amount here :)

also I usually use a mix of semi-sweet and milk chocolate on mine...
